This returns to a classic non-fruit dominate style with aromas of earth, cedar, dried cherry, charcuterie, dried plum, soy and balsamic, and a baked earth. The palate is light with savory notes of charcuterie, soy, earth, and dried cherries and plums. MK D&M Tasting Notes March 2026

OVERVIEW: “Bordering Savigny, ‘Boutières’ faces southeast, at the foot of the slope, touching premier crus ‘Vergelesses’ and ‘Les Fichots.’  Soils are deep, clay-rich and vines average 70+ years.”

WINEMAKING: “Hand-harvested.  Destemmed; fermented on indigenous yeasts in temperature-controlled, stainless steel tanks. Aged in older French barrels (10% new) for one year.  Bottled unfined and unfiltered.”

TASTING IMPRESSIONS:  “Aromas of black fruits, licorice, earth, light pepper.  Juicy and fleshy, with good energy; bramble fruit, violet candy”
