- Viticulture: Certified organic (Ecocert, 2005), certified biodyverse (LPO), only copper-sulfur treatments, horse plowed since 2019.
- Vinification: Vinification and aging without added SO2, ambient yeast fermentation and aging for 12 months in used barrels, full malolactic fermentation, blended and aged in tank for a few additional months, minimal SO2 added before bottling.
