Whistlepig began their whiskey-making journey with a group of Rye enthusiasts seeking innovative and boundary-pushing ways to craft whiskey. Their quest began in a small abandoned dairy farm in Vermont farm country. After years seeding, harvesting, mashing, fermenting, distilling and patiently waiting, they present their first barrel of 100% WhistlePig Farm-to-Bottle whiskey. Made with 100% Remington Rye harvested from the North Orwell 1 field of WhistlePigs 500-acre Farm, Beyond Bonded FarmStock Rye is a Straight Rye Whiskey crafted completely from grain-to-glass. Beyond Bonded was distilled on WhistlePigs original hybrid still, Mortimer, proofed with water from WhistlePigs Farm well, and aged in Vermont Estate Oak barrels from local Vermont Oak. This first release of their Farmstock Rye comes from the oldest barrel in the release at 4 years, 8 months, and 14 days. A single barrel release, you don't want to miss out on a chance to grab one for yourself. On the nose is a young rye feel, with toasted grains, dried herbs, and a light lumberyard note. The palate is further invigorated with chewy, semi-sweet grains, and a strong, dusty oak, with green herbs, and a bit of red apple fruit. The finish is pungent with green herbs and a wooded tinge. With this delicious Rye, Craft a proper Old Fashioned, Sazerac or Manhattan. Or, you can drink it Straight or with a bit of club soda!
