History
The Macallan Fine Oak 21 Year Old Single Malt Scotch Whisky is a limited edition single malt which has been matured in three different casks for its flavorful profile. This premium Scotch is matured at The Macallan distillery, established in 1824. Situated on a ridge above the banks of the River Spey, the Easter Elchies House has been the spiritual home of The Macallan for over three centuries. In 1820, Alexander Reid sowed the fields surrounding the rented home with barley and established the first licensed distillery on the estate, naming it Macallan after an ancient church destroyed by fire in the 15th century. Reid would ferment and distill excess grains into whisky, consumed straight from the still or sold to travelers. Today, the Macallan Estate encompasses 370 acres, with 95 devoted to the production of Minstrel barley, yielding 1,800 bottles annually. The distillery sources additional barley low in nitrogen and high in starch, creating a rich, oily whisky. After harvesting, barley is malted and mashed, fermented with cultured yeast, and distilled twice through small copper-pot stills, enhancing sweet esters while minimizing impurities. Following distillation, distillers remove heads and tails, collecting about 16% of the spirit for maturation.
