Distilling at Lindores Abbey began centuries ago, with the earliest written reference to Scotch Whisky (or Aqua Vitae) in Scotland appearing in the Exchequer Roll in 1494.
It records a Brother John Cor, a Lindores monk, who was commissioned by King James IV to turn 8 bolls of malt into Aqua Vitae. (8 Bolls of malt amounts to around 500 kg in modern terms and would have been enough to make about 400 bottles of today’s whisky).
Spirit started flowing once again from copper stills at Lindores Abbey Distillery in 2017, and the first single malt whisky was released in 2021.
This limited edition release, launched as 'The Casks of Lindores' series, showcases the award-winning spirit of Lindores Abbey Distillery. This first release was matured in ex-bourbon casks exclusively at a higher strength than the core single malt release at the distillery. Total worldwide outturn: 11,000 bottles.
Nose: Mellow fruity, red apples and pears combined with sweet vanilla, butterscotch and custard with citrus touches.
Palate: Vanilla mixed with orchard fruits like green cooking apples. On the back palate is a hint of bitterness, along with oaky notes and spicy pepper.
Finish: Mellow vanilla continues, with more sweet apple and pear, but that bittersweet woody spice lingers, backing up a peppery warmth.
