• Agave Source: 100% Blue Weber agave from single estates—Rancho Corralillos and Rancho Potrero Grande in Jalisco’s highlands

• Cooking: Slow-cooked in stone/brick ovens

• Extraction: Roller mill

• Fermentation: Open-air in wooden tanks using natural airborne yeast

• Distillation: Twice distilled in copper pot stills

• Aging: 12 months in ex-Old Fitzgerald bourbon barrels
