• Grapes are hand-harvested and put into small 15kg baskets
• Fermented for 10 days in Bernardo Vallana’s original concrete vats without any temperature control (other than delestage)
• Aged in used 500L wooden casks for one year
• Aged for a period of time in the cellar before release
• 125 cases produced annually
