R. Pouillon & Fils is one of Champagne's most exciting and principled grower-producers, based in the Premier Cru village of Mareuil-sur-Aÿ in the Vallée de la Marne. Fabrice Pouillon farms his vineyards according to biodynamic principles — a commitment to the land that goes beyond organic certification, working in harmony with natural cycles to produce wines of exceptional purity, vitality, and terroir expression.

The Rosé de Macération is a deeply individual and highly distinctive rosé Champagne made entirely from Pinot Noir grown on clay-limestone soils in Mareuil-sur-Aÿ. Rather than producing the rosé by blending white Champagne with still red wine — the conventional method — Fabrice allows the freshly pressed juice to remain in contact with the grape skins for up to 12 hours. This short maceration extracts color, aroma, and gentle tannin while preserving the freshness and precision essential to Champagne, giving the wine its distinctive pale ruby color, structure, and expressive red-fruit character.

Fermentation takes place in a combination of traditional enameled tanks and neutral oak barrels. Approximately 80% of the wine is élevaged for eight months, while the remaining 20% is aged for 18 months in neutral oak. The current year's wine is then blended with the longer-aged portion retained from the previous harvest — a thoughtful assemblage that balances the natural tannic structure of a macerated rosé with the softness, complexity, and mellow texture developed through extended aging.

The 2021-base Rosé de Macération is pale ruby-red in the glass. The bouquet is intensely flinty with generous aromas of raspberry, wild strawberry, red cherry, citrus peel, dried flowers, spice, and subtle brioche. On the palate, structured and energetic — ripe red-fruit flavors with bright mineral acidity and an emphatic, persistent mousse. Impressive concentration without heaviness, with a distinctly dry, clean, precise, and refreshing finish. A gastronomic rosé Champagne with the depth and structure to accompany an entire meal.

Pair with duck, roast poultry, pork, grilled salmon, tuna, mushroom dishes, charcuterie, washed-rind cheeses, and aged Comté.
