Description: Père Dom brandy is made from grape wines that are distilled in Coey stills and aged in French oak casks for at least one year in our cellars. These casks are the same ones we use for aging our V.S. cognac, which are made of large grain French oak with high temperature toasting (up to 200 C, or 392 degrees Fahrenheit). A small percentage of new casks are also used. After the aging process, the brandy is blended with older brandies. The typical grape varieties used in the production of Père Dom brandy include Colombard, Merlot, Muscat, and Airen.
Père Dom brandy has a nice amber color with dark copper glints and a limpid, shiny appearance. On the nose, it has fruit forward notes of pear, raisins, and dry pineapple, followed by a very delicate toasted vanilla flavor and a gentle finish of raisin and fudge. The palate is light and soft, with a delicate mix of Muscat grapes, winy notes, and toasted oak. The finish is nice and soft, blending typical French oak notes with a hint of exotic fruit.
