Pasubio is named for the mountain just south of Rovereto in Trentino, famous for a road with 52 tunnels the Italian army carved as an alternate supply route — and the amaro is every bit as much a tribute to place. It comes from Antica Erboristeria Cappelletti, established 1906, which spent most of its first century in Trento's historic Piazza Fiera before moving to Aldeno, surrounded by vineyards and apple orchards.
