Pasubio is named for the mountain just south of Rovereto in Trentino, famous for a road with 52 tunnels the Italian army carved as an alternate supply route — and the amaro is every bit as much a tribute to place. It comes from Antica Erboristeria Cappelletti, established 1906, which spent most of its first century in Trento's historic Piazza Fiera before moving to Aldeno, surrounded by vineyards and apple orchards. What sets Pasubio apart is its base: instead of a neutral spirit, it's built on rich aged wine, which is what gives it a vinous texture and rounded body most amari never achieve. The defining flavors are genuinely rare in the category — wild mountain blueberry and native Mugo pine, whose buds and young cones are harvested in spring and sun-dried through summer, joined by woodsmoke and bitter alpine herbs with gentian anchoring the bitterness. Wine & Spirits Magazine described it as definitely bitter but rounded by that aged-wine base and lifted by high pine and blueberry tones. Sweetness stays moderate, bitterness arrives late, and the finish runs dry and resinous.
