Where the standard Dark stops there, the Sherry Cask extends the journey with a final maturation in Spanish Oloroso sherry barrels — an oxidatively aged fortified wine cask that imparts pronounced dried fruit character, walnut shell, raisin, and a savoury oxidative complexity that the bourbon and port casks alone cannot achieve.
