The 5 Year marks the point in the Panama Pacific range where the toasted rye whiskey cask character becomes a meaningful contributor to the rum's flavor profile. Like all Panama Pacific expressions, it begins with freshly distilled sugarcane from Ingenio San Carlos's Coffey copper column still, run at slightly lower proof to preserve richer base spirit character. Three years in used American Oak ex-bourbon casks establish the vanilla, caramel, and tropical fruit foundation; then 2 additional years in toasted Tennessee and Canadian rye whiskey barrels layer in the distinctive cedar, honey, and orchard fruit notes that distinguish the Panama Pacific style.
The key technical distinction: these rye casks are toasted, not charred. Charring creates an aggressive, carbon-heavy extraction surface that rapidly imparts vanilla, caramel, and smoke. Toasting caramelizes the wood sugars gently without the char layer, allowing the 2-year finishing period to add honeysuckle, cedar, and orchard fruit in a way that complements rather than overpowers the rum's natural character.
