Miel de Tierra Espadin is a mezcal produced in the Oaxacan manner. The agave Espadin is more in line with Oaxacan style, and the agave is crushed by tahona rather than a mechanical shredder, as is the case with their other mezcals. After that, the agave is fermented in the open air before being distilled in a copper still.
