Made by Mezacalero Santos Juarez from a blend of alineño and cimarron agaves, the spirit is produced according to traditions dating back several centuries. After being cooked with local firewood and crushed with wooden mallets, the fermented juice is distilled in extremely rare, direct fire copper and parota wood stills. Batch 1 yielded a total of 550 liters. The aromas are high toned with infectious notes of kumquats, avocado leaf and fig preserves. The spirit is silken on the palate, slightly oily and seamless with graceful flavors of coconut, aguamiel, buttered toast and raspberries.
