These indigenous varieties form the backbone of many of the Douro’s finest Vintage Ports, contributing intense fruit, aromatic complexity, structure and excellent aging potential.

Winemaking & Aging

The grapes are harvested from the steep vineyard terraces of the Douro when fully ripe. During fermentation, grape spirit is added to stop fermentation while a portion of the grapes’ natural sweetness remains, creating the richness, intensity and balance characteristic of Port.

Vintage Port spends only a relatively short period in wood before bottling and is intended to mature slowly in bottle. Over time, youthful fruit and firm tannins gradually integrate, while the wine develops greater aromatic depth, softer texture and increasingly complex secondary flavors.

Tasting Notes

Maynard’s Vintage Port 2007 displays a deep, concentrated color with a full-bodied and richly structured palate. The aromatic profile is fine and expressive, showing the depth and intensity expected from traditionally produced Vintage Port.

With bottle age, the wine has begun to soften and evolve, developing greater harmony, structural complexity and mature character while retaining the richness and concentration at its core.

The finish is long and composed, making this an excellent choice for lovers of mature, traditionally styled Vintage Port.

Serving & Decanting

Serve at approximately 16°C / 61°F.

Vintage Port naturally develops sediment as it matures in bottle. For best results, stand the bottle upright for approximately 24 hours before opening, allowing the sediment to settle, then decant carefully before serving.

Serve in a generous Port or red-wine glass to allow the wine’s mature aromas and complexity to fully unfold.

Food Pairing

A classic after-dinner wine, Maynard’s Vintage Port 2007 is an excellent companion to Stilton, Gorgonzola and other blue cheeses.

It also pairs beautifully with dark chocolate, chocolate desserts, walnuts, dried fruits and mature cheeses. For a savory pairing, try it with richly flavored dishes such as steak au poivre.

Cellaring

Store horizontally in a cool, dark environment with a stable temperature and minimal vibration. Vintage Port is one of the world’s great long-lived wine styles, and properly stored bottles can continue developing complexity for many years.

Because sediment is a natural result of bottle maturation, mature Vintage Port should be handled gently and decanted before serving.
