Los Siete Misterios ("The Seven Mysteries") was founded to document the diversity of Oaxacan mezcal through expressions that capture specific agave varieties, production methods, and terroir. The Olla de Barro is the brand's most traditional expression — named for the clay pots (ollas de barro) used in distillation rather than the copper pot stills or column stills that dominate modern production.
Olla de Barro distillation is one of the oldest mezcal production methods, predating copper still technology. Porous clay vessels interact with the distillate differently than metal — allowing micro-oxygenation and imparting the clay's mineral character to the spirit. The result is a mezcal with a distinctively earthy, mineral, and slightly softer profile compared to copper-distilled expressions. The production is more labor-intensive, yields smaller batches, and requires more skill from the maestro mezcalero to maintain consistency across clay vessels.
