Lágrimas del Valle Reposado La Sabina 2024 is a vintage, single-ranch tequila produced in collaboration with the Rosales family at Tequila Cascahuín — NOM 1123 — in El Arenal, Jalisco, a distillery whose roots in the valley of Tequila extend to 1904. Cascahuín is led by Master Distiller Salvador "Chava" Rosales Trejo, the fourth generation of his family to distill on the same site. The La Sabina ranch, situated in La Romita, Guanajuato at an elevation of 1,760 meters, marks the fifth field harvested for the Lágrimas del Valle project and the brand's first release from outside of Jalisco and Michoacán. The blue Weber agave grown at this altitude in Guanajuato's high-elevation terrain recorded an average brix of 37% at harvest — a measure of the concentrated sugars that the long growing cycle and demanding climate produce — and represents a direct expression of terroir from a state rarely encountered in single-estate tequila production.

The production method at Cascahuín combines traditional and contemporary techniques in deliberate proportion. The harvested piñas are cooked in masonry ovens before being processed through a split of 70% roller mill and 30% tahona — the volcanic stone wheel whose slower, more extractive crush contributes textural depth and fiber-influenced character to the fermentation. The juice is fermented separately in both stainless steel tanks and open-air wooden vats with agave fibers, a dual-vessel approach that develops distinct aromatic profiles before the streams are combined and double-distilled in stainless pot stills with copper coils. The reposado then rests for three months in third and fourth fill ex-bourbon casks — seasoned wood that imparts a measured and transparent oak influence without displacing the ranch's native agave character. The spirit is bottled additive-free at 46% ABV.

The nose opens with rich cooked agave, caramel, dried pineapple, and mango, alongside cinnamon and a soft vanilla sweetness contributed by the bourbon cask. The palate is coating and full-bodied, with honeyed agave, butterscotch, toffee, and baking spice building through the mid-palate alongside a subtle nuttiness and the mineral thread that reflects La Sabina's high-elevation Guanajuato origin. A gentle serrano pepper note adds vibrancy without sharpening. The finish is long and elegant, fading slowly through sweet agave, toasted oak, and a lingering roasted almond quality that closes the expression with quiet complexity.
