Kinishihai is brewed in Niigata Prefecture — one of Japan's most revered sake-producing regions, celebrated for its cold winters, pristine snowmelt water, and the distinctive ‘tanrei karakuchi’ style: clean, dry, and refined sake of exceptional elegance and food-friendliness. Yukikage — meaning ‘Snow Shadow’ — is a Tokubetsu Junmai, a special designation within the Junmai category indicating a higher level of rice polishing or a distinctive brewing technique that elevates the sake above the standard. It is crafted from a blend of two local Niigata rice varietals — Gohyaku Mangoku and Koshi Ibuki — both milled to 58% of their original size, removing the outer layers to reveal a cleaner, more refined grain. Fermented with S-3 yeast, which produces a mildly fragrant and clean profile with light earthy qualities, Yukikage is a true expression of the gutsy, grounded Niigata style: smooth, earthy, and built for the table.
