OVERVIEW:

On February 16th, 2022 Kenny and Ryan were invited to hang out with Trey Zoeller and select some barrels from the rare single barrel program.  This was our first ever Jefferson's selection and we couldn't have been happier to have been there.

We ended up with 2 barrels aged roughly 9 years and then each went through a secondary finishing step for an additional 4-5 months.  The first barrel, Twin Oak, spent 5 months in a barrel where the staves had grooves carved in, which ultimately increased the surface area, exposing the bourbon to more toasty sweet oak.  The second barrel spent a similar amount of time in a barrel that originally held bourbon for 4 years, then was used to hold rum for 11 years, and finally kissed our Jefferson's barrel with its rum goodness.  We think you'll enjoy "JERSEY SHORE" & "RUM HAM".

Sticker Theme - "JERSEY SHORE", Barrel #42, Aged 9 years, Finished 5 months in "Wave Stave" Twin Oak barrels.  90.2 Proof, 45.1% ABV

TASTING NOTES:  by Brian Beyke

  • Nose:  the nose is soft and inviting - much in the lines of a softer, buttery but more savory 1910 or Woodford double-double oak - rich & savory leather, Cool Whip, candied bacon, stewed apples, macerated cherry, and lingering baking spice.
  • Palate:  the palate continues with toasted charred oak and maraschino cherries before spiced ground cinnamon. There’s a bit of banana right in the mid-palate before a  dry lingering of coffee and spumoni ice cream.
  • Finish:  The lingering is long and dry, gum-tingling and still leaning savory with wine-soaked fruits, spice, and tannic oak.
