Tasting Notes

The color is bright lemon-yellow. The nose is fine and expressive, revealing green citrus notes accompanied by exotic and spicy nuances of lemongrass and white pepper. The attack is soft, followed by a pleasant flavor of citrus and zesty peels. A fresh, saline minerality emerges, accented by a hint of bitterness. The lemongrass notes
integrate seamlessly and extend into a refreshing finish.

Pouilly-Fumé’s complexity originates from the various Pouilly-Fumé terroirs. Like nowhere in the world, the Sauvignon Blanc grape variety reveals its full potential thanks to the diverse terroirs of Pouilly. Thanks to rigorous work in the vineyard and the winery, J. de Villebois encapsulates the spirit of the Pouilly-Fumé appellation.

The 2025 vintage, marked by a warm and early season, led to the start of harvest as early as September 1st, extending over about fifteen days. Fermentation was carried out in concrete and stainless steel tanks at controlled temperatures. Particular care was taken to preserve the acidity and freshness, true hallmarks of our Pouilly-Fumé.
