Noé is one of the rarest and most extraordinary sherries in existence. Produced by González Byass — the historic house behind Tio Pepe — from sun-dried Pedro Ximénez grapes with a final average age of over 30 years, this VORS (“Very Old Rare Sherry”) is a wine of almost incomprehensible concentration and complexity.

With a sugar level of 400 grams per liter, Noé pours like liquid velvet: deep mahogany, viscous, and intensely aromatic. The nose layers buckwheat honey, Black Forest cake, dried fig, raisin, chocolate, cinnamon, and a haunting balsamic depth. On the palate, the sweetness is perfectly balanced by a bright, racy acidity that is utterly uncommon for wines of this richness — finishing long, fiery, and unforgettable.
