  • Matusalem is made by González Byass, a historic sherry bodega in Jerez, Spain. 

  • It’s an Oloroso-based sherry: the base wine is from the Palomino grape, which is fortified, then aged oxidatively (no flor yeast). 

  • The wine is sweetened by blending with a portion of wine from the Pedro Ximénez grape (≈ 25%), giving it richness and sweetness. 

  • Age: The bottling is from the “VORS / 30-year-old solera” category — meaning the average age (across the solera system) is at least 30 years

  • Alcohol by volume: ≈ 20.5% ABV

Tasting Note

  • Intense mahogany / deep amber color.

  • Rich dried-fruit nose: raisins, figs, prunes; sometimes mixed with candied orange peel, dried citrus peel

  • Additional layers: spice, coffee / mocha / dark-chocolate, leather / mature wood / oak, and sometimes a subtle “rancio” / nutty-walnut or hazelnut / praline-like character.

Palate & Finish

  • On the palate: rich, velvety, full-bodied — a mix of sweetness (from the PX) and structured dryness / complexity (from the Oloroso base + oak). 

  • Flavors: dried fruit (figs, raisins, dates), coffee, toffee / molasses, dark chocolate, maybe a hint of spice or leather

  • Finish: long and smooth, with a bittersweet balance — sweetness from the PX-blend, tannic grip from the oak.
