This beer is a blend of three different barrel aged beers, with two beers aged in stainless, to produce a Gose that highlights what we love about producing this style with mixed culture methods. It is a tart, and fruity wheat ale, with pronounced citrusy coriander and restrained salinity, but we find that producing it in a slower mixed culture process yields a rounder and more complex character. Choosing different vintages for this blend also allowed us to produce a balanced acidity and weave in some supporting barrel character.
The aroma is a fruity mix of overripe yellow peaches, and red apples, with layers of citrusy coriander and warm oak tones. The flavor is tart with notes of green pear and candied lemon balanced against sourdough bread and subtle oak driven vanilla. The blend of Murphy & Rude malted wheat and spelt provide a soft roundness to the palate but tannins and a mild salinity lend a very dry finish.
