Rey Fernando de Castilla is one of Jerez's most celebrated boutique bodegas, founded in 1999 by Norwegian entrepreneur Jan Pettersen in the historic Jerez de la Frontera. The bodega has quickly earned a reputation for producing some of the finest and most authentic Sherries in the region — wines of exceptional purity, complexity, and terroir expression that honor the ancient traditions of Jerez while bringing a modern sensibility to their presentation.
Fino is the driest and most delicate style of Sherry — a wine unlike any other in the world. Made from Palomino Fino grapes grown on the chalky albariza soils that are unique to the Jerez region, the grapes are pressed and fermented in stainless steel before fortification. The wine is then biologically aged under a living layer of flor yeast in American oak barrels within a traditional solera system — a continuous fractional blending process that produces wines of no singular age. The Fino Classic is approximately 5 years old on average, the flor protecting the wine from oxidation and imparting its signature saline, nutty, and yeasty complexity.
Pale straw in the glass. The nose is enticing and complex — nectarine, white peach, almonds, walnuts, hazelnuts, chalk, quinine, and citrus oil. On the palate, medium-bodied and bone dry with layers of apple, earth, subtle banana, caramel, and saline, a lemon citrus backbone, and a long, vigorous, dry finish with a lovely fleur de sel echo. Drink now — and keep refrigerated after opening.
The ultimate aperitif. Pair with Iberian ham, anchovies, olives, fried seafood, sushi, and almonds. Serve well chilled in a copita or white wine glass.
