Encomienda de Cervera is one of Spain’s most singular estate wineries — a historic property with documented vineyard records dating to 1741, situated in the Campo de Calatrava, a volcanic appellation in Castilla-La Mancha that remains one of the country’s best-kept secrets. The estate’s vineyards grow on volcanic soils at 750–850 meters of altitude, cooled by mountain microclimates with cold nights that preserve natural acidity and generate exceptional aromatic complexity. Vulcanus — named for the volcanic terroir that defines it — is a blend of Sauvignon Blanc and Verdejo, harvested selectively during the coolest hours of the day at optimal ripeness. Certified organic, the wine is fermented in restored 1927 concrete tanks that impart a distinctive creaminess through malolactic fermentation. This is Spanish white wine from a place unlike any other.

The color is a bright straw yellow. The nose is floral, fresh, and expressive: white flowers, white peach, currant, citrus, and aromatic herbs, with the stony, mineral undercurrent of volcanic soil. On the palate, it is mineral, elegant, and complex — refreshing acidity, a round and creamy mid-palate from concrete tank fermentation, and a long, clean, and satisfying finish.
