Akashi Single Malt Japanese Whisky is produced by Eigashima Shuzo (White Oak Distillery) in Hyogo Prefecture. It is made from 100% lightly peated barley, which is distilled in copper pot stills. The whisky is aged for 4 years in ex-bourbon barrels and then finished for an additional year in ex-Kijoshu sake casks, which are made from American oak. The nose of Akashi Single Malt Japanese Whisky has notes of candied orange, almond butter, and sake lees, while the palate expands with flavors of saltwater taffy and cocoa. The finish is marked by fresh cypress and black tea tannins. This whisky has an alcohol content of 50% ABV. Kijoshu is a rich style of sake that is made by replacing some of the water used in the fermentation process with finished sake. It is similar in character to a port or sherry and imparts a unique flavor to Akashi's elegant single malt whisky.
