Eden Mill originally started up as a brewery on the site of an old paper mill close by to St. Andrews in 2012. By 2014 copper stills had been installed with the aim of producing single malt whisky - which was first released in 2018.
Representing one-half of Eden Mill's new flagship core range, the Bourbon Cask Single Malt is their first-ever full bourbon maturation bottling and a nod to the house style that can be expected from the new distillery. A Lowland whisky with a Highland heart, seamlessly combining a sweet, grassy, and floral newmake with a robust, spicy, and fruity maturation style.
TASTING NOTES
Medium char bourbon casks provide enticing flavours of spiced fruit crumble and salted caramel cookies, with a subtle hint of oak spice. The very best of bourbon flavours bolstered by the fruity and floral Eden Mill new make spirit.
