I finally did my taxes, and now I need an (affordable) drink!
After crunching all those numbers, I'm ready to crush a crisp and clean glass of Burgundy's other white grape- Aligote.
Much less famous, and therefore much, much cheaper than Bourgogne Chardonnay, the Aligote varietal still benefits from the mineral-rich soils and the winemaking traditions of this storied region.
We currently offer the 2021 vintage of Domaine Pansiot Aligote for an outstanding price, making it easy to try something new! And that courageous curiosity will be rewarded with a nose full of white flowers and subtle savory herbs. The palate abounds with tart green apple and peach flavors, finishing with a pronounced acidity that keeps the Thirst/Quench/Repeat cycle fully engaged.
Usually, I recommend a food pairing or two, but on a recent afternoon I paired this lovely wine with a comfortable chair on the porch and spent half an hour watching squirrels dig in the yard. Perhaps they're hiding those nuts from the taxman?
