The Sauvignon Blanc comes from vines planted in the 1980s on flinty, clay-based soils. In the cellar, approximately one-third of the fruit may receive skin maceration depending on the vintage, helping build body and fruit while balancing the wine’s natural acidity. After gentle pressing and cool, temperature-controlled fermentation, the wine rests on its fine lees in stainless steel before bottling.
