History
Del Maguey San Pedro Taviche Mezcal is a unique spirit that is a limited edition mezcal made in a remote mountain valley of Ocotlan, Oaxaca. This exceptional mezcal derives its distinctive flavor from the careful blending of wild agaves, including Espadin, Tobala, Tobasiche, and Tepextate, each contributing its own character to the final product. The production process involves traditional methods, where the hearts of the agave are roasted in the earth, imparting a smoky essence. After roasting, two skilled men grind the agaves using giant mallets, ensuring a thorough mash. The fermentation process occurs naturally, relying on airborne microbes to transform the sugars into alcohol, and is followed by a slow distillation in a small 150-liter copper still, resulting in a rich and complex spirit that reflects the unique terroir of the region.
