The production of Del Maguey Arroqueno Mezcal is a labor-intensive and time-honored process. Maguey hearts are roasted in a conical pit over hot rocks, then buried with earth for three days, allowing the smoky and earthy flavors to develop. Fermentation takes place naturally with airborne microbes over thirty days, infusing the mezcal with distinct and complex flavors. Finally, the spirit is twice-distilled in an ancient clay still with bamboo tubing, following the original, centuries-old Oaxacan hand-crafted method.
