This Clynelish is drawn from refill hogsheads and bottled under Thompson Bros' ‘Sutherland’ series. The nose opens with lemon zest and grapefruit peel, before softening into marzipan biscuit and caramelised barley, rounding things out over a signature Highland-coastal waxiness. The palate carries the citrus through, picking up a savoury, briny twist of green olive against sweet pineapple juice, then turns rich with lemon meringue and crème anglaise, finishing on beeswax and honey. The finish is long, buttery and creamy, with citrus oil and toasted barley lingering. A lively, waxy expression that shows why Clynelish is so prized.
