This gains richness and depth of flavor from its long ageing in oak barrels on its lees before being carbonated. It calls to mind a souped up Prosecco more than a tiny bubble Champagne. The nose opens with aromas of oak barrel, ripe cut apples, Meyer lemon and some butterscotch hard candies. WINERY NOTES:

OVERVIEW: “CARBO-NATION is for everyone who loves bubbles. Meant to be immediately accessible and delicious, it is a blend (of) grape varieties, aged extensively on yeast in barrel, and bottled ready to drink. Candied citrus and stone fruits crown the rich and juicy palate. This wine is based on a perennial reserve of mature wines. Individual lots from (multiple vintages that) have been blended and continued to age on yeast in neutral barrels. Each bottling contains portions of this aged reserve along with young wines, carefully blended. Grape varieties include Albarino, Chardonnay, Pinot noir, Primitivo, Carignan, Pinot grigio, and Chenin blanc (basically everything we work with!) A lower CO2 content makes this wine more gentle and accessible. The bottles were crown capped in order to preserve the natural youth and freshness of the wine. The wine has plenty of age in barrel. We prefer crown caps as a final closure. They are safe and easy to open, and they are trusted across the world to age wines before disgorging (including Champagne!).”
