Caol Ila — pronounced "Cull Eela" — is one of Islay's most storied and beloved distilleries, situated on a secret bay on the northeastern shore of the island, overlooking the Sound of Islay toward the Paps of Jura. Founded in 1846, the distillery has long been a cornerstone of Islay whisky culture, its remote location accessible only by sea for much of its history. For over 100 years, small coal-fired "puffers" like the SS Pibroch brought barley, coal, and empty casks to the distillery, returning her whisky to the mainland through the Sound of Islay.

Today, Caol Ila remains true to its heritage. The barley is still malted locally at Port Ellen, and pure spring water still rises from limestone in nearby Loch Nam Ban, falling to the sea at Caol Ila in a clear crystal stream — just as it always has. The result is a whisky of genuine Islay character: peaty and maritime, yet more restrained and elegant than many of its island neighbors.

The 12 Year Old is Caol Ila's signature expression — a beautifully balanced Islay malt that showcases the distillery's distinctive style. The nose is fresh and complex — subdued peat smoke, citric fruitiness, sea salt, and a hint of malt. On the palate, a sweet start with peaty and salty notes, citrus, and a touch of olive brine, leading to a lengthy, slightly dry, smoky finish. Elegant, approachable, and endlessly rewarding.

Best enjoyed neat or with a splash of water to open up the aromas. Pair with tapenade, smoked fish, oysters, or aged hard cheeses. Also excellent in a Penicillin cocktail.
