This Sparkling Rosé begins with Pinot Noir grapes grown in Santa Lucia Highlands, chosen for their bright acidity and red-berry character. After destemming, a brief cold soak on the skins imparts a delicate blush color before gentle pressing. Primary fermentation in stainless steel preserves purity of fruit, and secondary fermentation in the bottle follows the Champagne method. Extended lees aging (9 10 months) enhances creaminess, while minimal dosage retains lively acidity. The result is a pale salmon wine bursting with wild strawberry, watermelon rind and a whisper of almond.
