The strawberries are then filtered out and “washed” with local white wine, which is combined with the infused spirit. Separately, thousands of pounds of grapefruits and oranges are individually peeled and, along with dried bitter orange peels, undergo a three-to-four-week spirit maceration before being blended with the strawberry-infused fortified wine. Vivacious and refreshing, Solstice can be enjoyed over ice, with soda, or used in place of wine-based aperitivi like Cappelletti and sweet white vermouth, or as a lighter alternative to bitters such as Aperol.
