Description This spirit is crafted from the Java varietal Santa Maria cane sourced from Tlalixtac, Oaxaca, grown at elevations of 2,500 to 3,800 feet. It undergoes fermentation for 5 to 10 days in stainless steel tanks using ambient yeast. Distillation took place in September 2021 by Axel and William Krassel on an 8-plate column still. The liquid is then aged for 24 months in an ex-Bourbon cask within a humid climate, resulting in a 9% angel’s share. It will be bottled in February 2024 at cask strength, offering a robust 55.8% ABV, with a total of 239 bottles produced. No water, sugar, or coloring has been added.
