Hand-harvested in the early morning, the grapes undergo de-stalking, followed by a 4-day cold soak of whole berries before inoculation. Fermented for 13 days in stainless steel tanks at a controlled temperature of 20–25 degrees Celsius, this wine is pampered with twice-daily pump-overs to nurture delicate tannins. Post-fermentation, a gentle press leads to maturation in old barrels, where malolactic fermentation completes its journey. The result is an intense ruby-purple elixir, unveiling layers of red and black fruit, black pepper, herbal notes, and delicate violets. Prepare for a symphony of flavors in every sip.
