123 Organic Tequila Anejo is a remarkable expression from the 123 tequila series, crafted by the skilled David Ravandi. This exquisite Anejo tequila is made from hand-selected Blue agave, cultivated in the picturesque Amatitan mountains of Jalisco, Mexico. On the nose, it presents delicate aromas of tannins and wood oil, inviting you to explore further. The palate reveals a luxurious blend of rich caramel and dark chocolate, culminating in a refreshing finish that highlights bright agave notes intertwined with subtle oak nuances.

History
123 Organic Tequila Anejo was created by David Ravandi after 30 years of specializing in organic farming and distillation. His dream was to create a purely organic and sustainable tequila that captures the essence of the mountains of Amatitan. The agave plants are meticulously cultivated for 10 years before they are harvested at peak maturity. The heart of the plant, known as “The pineapple,” is roasted in an old-fashioned stone oven, imparting rich flavors and aromas. Following this, the pulp is extracted, and the fermentation process begins, leading to the creation of four distinct styles of tequila: Blanco, Reposado, Anejo, and Extra Anejo (diablito). Each style reflects a unique aging process, with Anejo being aged for at least one year in oak barrels, allowing for a deep, complex flavor profile.
